Tasting notes
You know, Philippe Carille's Poupille from 1999 is really something special. Coming from the Castillon region in Bordeaux, it's mostly made with Cabernet Sauvignon and Merlot. Opening this bottle is like unlocking a treasure of deep flavors.
In the 9th volume, this wine appears as the special red that a late mentor wanted Shizuku to experience. At first, it might seem a bit tough to get into, but once you do, you'll notice those dark, jammy fruit aromas that just fill the room. It's like listening to a soulful jazz track, really.
When you pour it, you'll see the rim has that nice brick color that shows it's aged well. Taking a sniff, you get hit with blackberry and black cherry scents, with a touch of tea and dried herbs adding complexity. On the palate, the tannins are strong and wrap around your tongue, giving a powerful feeling. Then, there's this rich acidity that follows, making the whole thing well-balanced.
The finish goes on and on, leaving you with a lingering complexity that's perfect for a special evening. Letting it breathe a bit before enjoying will really bring out its charm, you know.
