Tasting notes

Salon Champagne is something special, you know. Made in Champagne, it's predominantly Chardonnay, with just the right touch of Pinot Noir and Pinot Meunier. We don't know how long it's been aging in the bottle, but that mystery adds to the excitement when you open it.

In volume 13, there's a scene where Shizuku suggests this Champagne to Mihi, thinking it might oddly pair well with kimchi. It's interesting, right? You wouldn't normally think of such a combo, but the fine bubbles and acidity seem to match well with fermented foods.

When you pour it, it has this beautiful gold color with fine, persistent bubbles. The aroma is like a burst of green apples and citrus—so fresh and lively. As you take a sip, the sharp acidity hits you first, followed by a creamy texture. There's also a solid mineral backbone, making it all come together elegantly.

The finish is long, letting you savor it to the end. Try serving it chilled in a smaller glass. It'll really highlight the fresh aromas and delicate bubbles. You gotta try it.
