Tasting notes
Verget's 2003 Chablis Premier Cru is a fantastic choice if you want to get the essence of Burgundy Chardonnay. This vintage, from a particularly hot year, allowed the grapes to ripen fully, making the wine rich and flavorful. As a Premier Cru from Chablis, it really shines with its mineral character, making it a perfect match for seafood.
This wine makes an appearance in volume 3, when Watanuki serves it to Shizuku and Miyabi. It was a topic of conversation as it's a vintage variation of a white wine once served to Issei. It was a moment when you could really feel the story of the wine stretching across time.
When you pour it into your glass, take a look at that slight golden hue and the nice viscosity. Bring it closer to your nose, and you'll be greeted by vibrant citrus aromas like lemon and lime. There's also a sweet hint of ripe white peach that makes it quite an adventure for the senses.
Take a sip, and you'll experience a solid mineral presence. It's like a refreshing stream flowing over cold stones. The acidity is firm, and the body is rich and round. The finish lingers long, with a pleasant acidity that tempts you for another sip. Chill it a bit and pair it with some seafood, and you've got yourself a great combination.
